PANPOLE / RICE PAN CAKES

Panpole or the Rice Dosa or the Rice pan cake is the simple enjoyable breakfast food which is prepared in every household in the southern coastal town of India. It is basically prepared out of raw rice and not much prior preparation is essential. It can be eaten plain, however dipped in a chutney or sambhar or a curry enhances its taste.



To prepare :

Ingredients:

1 cup raw rice, washed and soaked in water for 3 hours

1 tspn salt

1 egg

2 cups of water

1 tablespoon of cooking oil

Method:

  • Grind the soaked rice to a smooth paste in a grinder, using half of the water.
  • Mix the egg with the batter.
  • Add salt and mix well.
  • Make a mixture of flowing consistency using the remaining water.

  • More water can be added if the mixture is thick.
  • Keep a non-stick pan on the fire.
  • Grease it with the oil using a half cut onion.
  • Take a ladle full of batter and spread it evenly on the pan or shake the pan so that the mixture
  • Spreads evenly.
  • Cover the pan with a lid.
  • Allow to cook for a minute and transfer it to a plate to cool.
  • Fold the dosa into four folds and serve with a chutney or sambhar or curry.
