CHANA BATURA / CHOLE BATURA


Chana Batura or Chole Batura is a Punjabi dish, however it has conquered the hearts of Indians all over. This combi makes a delicious meal and it is a children’s as well as grown ups' favourite delicacy. Inspite of the high caloric value (as the baturas are deep oil fried), its an all time favourite in our household. Chole batura goes well with a tall glass of flavored lassi or yogurt or any cool, refreshing drink.


To Prepare Chole Batura:

For batura:-

  1. Maida - 2 cups
  2. Milk and Curds – enough quantity to knead the dough
  3. Baking powder - 1/2 tsp
  4. Salt - As required
  5. Oil for deep frying


For channa:-

  • Chick peas(Kabuli chana) - 1 cup
  • Onion(large) - 1 no finely cut
  • Tomato - 1 no (finely chopped)
  • Green chillies - 1 no. (finely chopped)
  • Ginger - 1” pc minced
  • garlic minced - 4 flakes
  • Chilly powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Garam masala powder – 1/2 tsp
  • Cumin seeds - 1 tsp
  • Oil – 1 tbspn;
  • Salt - As reqd
  • Coriander leaves for garnishing

For the batura:-

  • Mix together all the ingredients for making baturas.
  • Knead them together to make a smooth dough.
  • Keep it aside at least for 1 hour.
  • Make medium size balls of the dough and roll out to thick big poories.
  • Deep fry in oil.


For the channa:-

  • Soak the channa overnight. Pressure cook it, till done.
  • Heat oil in a kadai. Splutter cumin seeds and spices(cloves and cinnamon).
  • Add onion paste and ginger-garlic and saute, till the oil starts to separate.
  • Add all powders and salt and saute for a few seconds.
  • Add tomatoes and green chillies and saute, till the tomatoes blend well.
  • Add the cooked channa and mix well.
  • Cook, till the gravy thickens.
  • Garnish with coriander leaves.

Delicious Chana Baturas ready to serve.
