Caesar's salad is a summer salad in Greek cuisine. There are different types of caesar's salads with varied ingredients. The main ingredient being lettuce leaves, olive oil, lime juice and vinegar.
TO PREPARE THE CAESAR'S SALAD:
- 1 bunch lettuce leaves
- 2 hard boiled eggs
- I large tomato – deseeded and cut into thin long pieces
- 2 slices white bread for stir fried garlic croutons
- 2 tsp butter
- 2 – 3 flakes garlic crushed
- 4- 6 pepper corns crushed
DRESSING:
- 3 tbsp extra virgin olive oil
- 12 tbsp vinegar
- 1 tbsp lemon juice
- 2 flakes garlic crushed and chopped finely
- ¾ tsp salt
- ¼ tsp black pepper powder
- 1/2 tsp sugar
- 1 tsp mustard paste or powder
- GARNISH
- 2 tbsp parmesan cheese (optional)
METHOD:
- Cook the chicken breast with salt. Cool it then coarsely chop the Meat into small pieces.
- Tear the lettuce leaves into small pieces. Soak in chilled water.
- Mix all the ingredients of the dressing in a small bottle and shake well.
- Pour the dressing over the chicken pieces in the bowl and mix well. Cover and refrigerate.
- To make croutons, add olic oil in a pan, add garlic n roast for a while.
- Add cut bread pieces and fry till crisp.
- At serving time, roll the lettuce leaves in a clean kitchen towel to dry.
- Mix lettuce leaves, tomatoes, eggs cut length wise and croutons in a large bowl.
- Add the chicken with the the dressing on the mix.
- Toss gently with a fork. Garnish with cheese.
- Serve immediately.
** The salad can be prepared without chicken and cheese and still will taste delicious.
