Curries or sukkas (dry curries) with the finely minced or thinly sliced bamboo shoots are mostly prepared. Green gram sprouts added to the shoots gives an additional taste and blends well with the Boiled Rice.

- 2 cups bamboo shoots minced (or cut into small pieces)
- 1 cup sprouted green grams
- Ingredients for the Masala:
- 1 1/2 tspns coriander seeds
- 3/4 tspn jeera/cumin seeds
- 1 tspn mustard seeds
- 1/4 tspn fenugrek seeds
- 2 tspns rice grains
- 1 cup coconut
- 1 onion
- 6 flakes garlic
- 1/2 marble sized tamarind paste
Method:
- Roast all the masala except tamarind
- Grind to make a paste adding water
- Parboil the minced bamboo shoot and sprouts with little water;
- Add the ground masala. The gravy should be thick
- Cook well adding salt to taste.

The mouth watering-delicacy is ready to be served with Rotis/chapathis/panpales (pan cakes) or Rice.
