BAMBOO SHOOTS & SPROUTED GREEN GRAMS (MUNG) BROTH

Bamboo shoots are vegetables and are available in plenty only during the Monsoon season in the coastal area of Southern part of India. Canned shoots are not as palatable as the fresh shoots. Dietary fibre and protein contents are more in the bamboo shoots with less fat and carbohydrates making it a nutritious meal.

Curries or sukkas (dry curries) with the finely minced or thinly sliced bamboo shoots are mostly prepared. Green gram sprouts added to the shoots gives an additional taste and blends well with the Boiled Rice.


TO PREPARE :

Ingredients:

  • 2 cups bamboo shoots minced (or cut into small pieces)
  • 1 cup sprouted green grams
  • Ingredients for the Masala:
  • 1 1/2 tspns coriander seeds
  • 3/4 tspn jeera/cumin seeds
  • 1 tspn mustard seeds
  • 1/4 tspn fenugrek seeds
  • 2 tspns rice grains
  • 1 cup coconut
  • 1 onion
  • 6 flakes garlic
  • 1/2 marble sized tamarind paste

Method:

  • Roast all the masala except tamarind
  • Grind to make a paste adding water
  • Parboil the minced bamboo shoot and sprouts with little water;
  • Add the ground masala. The gravy should be thick
  • Cook well adding salt to taste.
  • Season with oil, mustard seeds and curry leaves.

The mouth watering-delicacy is ready to be served with Rotis/chapathis/panpales (pan cakes) or Rice.
