CHEESECAKE STRAWBERRY FLAVOURED

Cheesecake is a dessert consisting of a topping made of soft, fresh cheese, usually on a crust or base made from biscuits or sponge cake. It can be baked or unbaked, chilled in the refrigerator. Cheesecakes are sweetened with sugar and may be flavored or topped with fruits, nuts, fruit sauces or chocolate.

The one which I have presented here is made with a crust of digestive biscuits. Topping is made of hung curds and cream, flavoured with strawberry crush.

TO PREPARE THE CHEESECAKE:

Ingredients:

12 marie biscuits

4 tbsp butter

400 ml curd packet

200 ml cream, whipped well

100 gms powdered sugar

1 tsp gelatin, dissolved in 2 tbsp luke warm water

4 tbsp strawberry crush

Method:

  1. Crush the biscuits into powder by hand
  2. Blend in slightly melted butter into it and mix well.
  3. The mixture should resemble bread crumbs.
  4. Line the base of the tray with this mixture.
  5. Press it down so that it sets well at the bottom of the baking tray.
  6. Place it in the fridge to set well.
  7. Tie curds in a muslin cloth and hang it to remove all the water from it.
  8. Hang it for at least 3 to 4 hours. It should become a ball of curd.
  9. Mix hung curd, crush, gelatin mixture and sugar.
  10. Blend well to combine.
  11. Then add the whipped cream and flip together.
  12. Pour this on the biscuit base. Refrigerate till set.
Decorate with cherry halves.

The Cheesecake ready to be served in 2-3 hours.
