Sarpatel is a delicacy prepared using the spare parts of the pig. The parts must be thoroughly cleaned before cooking. Mangalorean sorpotel varies from Goan sarpatel. This is a delicacy known only to those who relish it.
Ingredients:
- 1 kg pork tripe (mixture of liver+intestine+other parts of the pig)
- 3 big onions – cut into small cubes
- 1 ½ pod garlic -quartered
- 4 green chillies-slit
- 1 ½” ginger minced
- 2 1/2 tbspns bafath powder
- 1” pc cinnamon
- 4 pcs cloves
- 1 tbspn tamarind paste
- 1” tbspn vinegar
- Few bay leaves
- Salt to taste
Method :
- Boil the parts until semi cooked, cool and cut into small pieces.
- Mix all the above ingredients and keep for boiling on medium fire.
- Keep stirring. More tamarind water can be added if required.
- Add salt when cooked well.
- Transfer from the fire.
Serve with sannas or idlis.

Thanks for the recipe. I have been searching for the same for a long time as it is one of my fav. pork dishes. Since I live in Dubai, want to know if the pork parts will be available as such. If so in what ratio I have to buy the mixture of liver, intestine, and other parts (which parts?)- also which ones to discard? other than that your recipe sounds very simple and I can't wait till and try it and taste.
Hi Smitha. Thanks for visiting my blog. Usually when buying the pork spare parts in Mangalore, the vendor is well aware what portion of each part should be included. But in the place where you have been residing, you might have to buy each part separately. It can be 1/4 portion of each of liver and tripe (ankity), and remaining portion can be the ear, legs, head also little port meat.
