This is a snack which can be prepared at ease and served either as a snack or as a side dish. Office going Mums can keep the mixture ready, to use as and when they wish to serve their children or to pack in tiffin boxes with ketchup. When eaten hot they are crispy n delicious....
TO PREPARE THE CUTLETS
Ingredients:
- 1 cup cooked chicken mince
- ¾ cup cooked and mashed potato
- ½ cup finely chopped onion
- 1” ginger piece minced
- 3 minced green chillies
- 2 tbspns finely chopped coriander leaves
- ¾ cup dry bread crumbs
- 2 eggs
- 3 tbspns oil for shallow frying
Method
- Mix together chicken, onion, ginger, chillies and sauté on low fire for 2-3 minutes and cool the mixture.
- Add to it mashed potatoes, coriander leaves, eggs and mix well.
- Add bread crumbs little by little until the mixture can be formed into lemon sized balls.
- Flatten these on a flat surface using a knife.
- Shallow fry in the oil on a non-stick pan until slightly brownish.
Ready to eat as a snack with ketchup or as a side dish.
